Potato Wedges

Delicious yellow potatoes and mix with italian herbs flavour. Quite simple to make and nice to eat with hot chilli sauce. I baked this in the Oven.

Prep Time : 10 mins
Cook Time : 40 mins
Serves :  2 people

Ingredients
  • Potatoes - 2 
  • Olive oil - 4 tbsp
  • Salt to taste 
  • Italian herbs - 1 tsp
  • Oregano - 1/2 tsp
  • Black pepper powder - 1/2 tsp
  • Crushed red peppers (optional) 

 Method
  1. Wash and peel the potatoes and chop length wise / wedges
  2. In a large bowl add potatoes, olive oil, salt , italian herbs, oregano and pepper powder toss them well
  3. Preheat the oven 400F
  4. Place the potatoes in the parchment paper / cookie sheet
  5. Bake 40-45 mins or until crispy brown
  6. Serve hot sauce

Potato Kurma / Aloo Kurma

This is tried the recipe by Mrs. Mallika Badrinath. Came out nice and suits for chapatis / roti's. Quite easy recipe I liked it.



Prep Time : 10-15 mins 
Cooking Time : 10 mins 
Serves : 2 People

Ingredients
  • Potatoes -3
  • Onions - 1
  • Garlic - 2-3 flakes
  • Tomatoes - 2 
  • Green chillies /  - 2 (medium hot)
  • Cinnamon - 1 piece
  • Cloves - 2
  • Chilli powder - 1/2 tsp
  • Coriander powder - 1 tsp
  • Salt to taste
Ingredients for Masala
  • Coconut - 1/4 cup
  • Poppy seeds - 1 tsp
  • Ginger - 1/4 inch piece
  • Turmeric powder - 1/4 tsp
 Method
  1. Cut the onions and chillies into long think peices
  2. Wash and peel the potatoes and boiled then mash coarsely
  3. Heat oil in a kadai / pan add  cinnamon, cloves and then chillies, garlic and then onion 
  4. Fry till golden color. Add chopped tomatoes and stir until moisture gets absorbed
  5. Mix mashed potatoes, fry for a minute then add chilli powder, coriander powder, salt , and little water 
  6. Boil together minute or two. Add ground masala 
  7. Boil well till gravy thickens 
  8. Serve hot with chapathis

Bread Upma


Bread upma is very simple easy i would say learners cooking and best for bachelors and kids will love different varitions of food and snacks. This recipe you can make it as bread or dinner rolls (Buns). I was made with dinner rolls.



Prep Time : 8-10 mins
Cooking time - 5- 8 mins
Serves - 2 people

Ingredients
  • Bread pieces / Dinner rolls pieces - 2 cups
  • Onion chopped - 1/2 cup
  • Tomato chopped - 1/4 cup
  • Green chillies chopped - 1 or 2 (medium hot)
  • Coriander leaves / Cilantro chopped - 2 tsp
  • Ginger paste - 1/4 tsp (optional)
  • Lemon juice - 1 tsp
  • Salt to taste 
Tempering
  • Oil - 2 tbsn
  • Mustard seeds - 1/2 tsp
  • Asafoetida / Hing - 1/4 tsp
  • Black chikpeas / Chana dal - 1/2 tsp
  • Turmeric powder - 1/4 tsp
Method
  1.  Take a medium wok / kadai. Heat oil 
  2. Add mustard seeds allow to splutter, then add turmeric, chana dal, hing and fry till dal turns golden
  3. Add chopped onions, chillies, ginger paste fry till onions are turns pink
  4. Add chopped Tomatoes stir fry add dinner rolls pieces stir fry
  5. Add salt and stir
  6. Then add lemon juice and garnish coriander and serve hot
