Turns 6 !!

My Vegeterian Recipe Website “Mala’s - Kitchen” turns 6 today. It has been an amazing journey with starting as a Blog and then turning it into a full fledged website. I cannot believe that its been 6 years since I am maintaining this. Thanks for all the support from my husband, mom, aunts & fellow bloggers – who have always been an inspiration and support to continue doing work on my website. Thanks to all my dear followers, viewers & readers without whose constant comments & appreciation I could not have continued doing this. Last but not the least my 2 sons who have suffered thru times when their mom is on the computer or in the kitchen , making new recipes and writing about them. Its been a journey of 285 recipes (tasty recipes , if I may say so) and still counting. 
 Today is also a Hindu Festival – Ugadi (Festival which ushers in the new year based on Hindu Calendar) which we are also celebrating, so this is sort of a double celebration for us. Happy to all my Viewers, Fellow-Bloggers, Family & Friends

Whole Wheat Pita - Pizzas

This is another easy way to make pizza's kids will love. Best for after school snacks for kids. My son loved this one and healthy too. Added Veggies in this.

Ingredients
  • Whole wheat pitas
  • Olive oil - 1 tsp
  • Red  onions sliced - 1
  • Garlic crushed - 1
  • Red chilli pepper crushed - 1/4 tsp
  • Broccoli florets boiled - 1/4 cup
  • Tomatoes chopped - 1
  • Salt to taste
  • Fita cheese 
  • Parmesan cheese
 Method
  1. Preheat the oven 450F (  230C ). 
  2. In a pan heat oil , add onions stir occasionally until golden color. Add garlic, red pepper then add broccoli florets & salt stir well.
  3. Arrange pitas in a large cookie sheets. Bake until lightly toasted about 2 minutes.
  4. Spread the mixture on toasted pitas
  5. Top with tomatoes and sprinkle cheese
  6. Bake until heated through 10 - 15 mins.
  7. Serve hot with ketchup

Note : If you dont get broccoli in the market then you can add other veggies .

Paneer Kurma

As I had mentioned earlier Paneer Kurma recipe is here. This was made to be a gravy dish in combination with Broccoli Pulao, Tangy tomato & Indian Spice Masala mixed with Coconut Milk & Paneer. Very yummy.. Try it 



Prep Time : 10 Mins 
Cooking Time : 15 Mins 
Serves : 2 

Ingredients
  • Paneer cubes - 1/2 cup
  • Onion - 1/4 cup chopped
  • Coconut milk - 1/4 cup
  • Milk cream - 1 tsp
  • Tomato Puree - 2 tbsp
  • Oil - 2 tbsp
  • Red chilli powder - 1/2 tsp
  • Salt to taste
  • kitchen king powder - 1 tsp
  • Coriander leaves chopped - 1/2 tsp
Ingredients for masala
  • Onion - 1/4 cup
  • Cinnamon - 1/2 piece
  • Clove - 2
  • Ginger + Garlic- 1/2 piece each
 Method
  1. Grind the masala adding little bit of water make a smooth paste
  2. Take a pan heat oil  fry paneer cubes and keep aside
  3. In the same pan add onions fry till onions turns pink 
  4. Add masala stir fry for few mins then add coconut milk, cream and tomato puree
  5. Bring to boil for 2 mins. Add chilli powder, kitchen king powder, salt
  6. Add paneer cubes boil for a minute remove
  7. Garnish coriander and serve hot.

Kesar Rabdi / Rabri

Rabri is a North Indian dessert / sweet. The dessert has a thick milk cream texture with flavor of almonds,pistachios & kesar. I love this dessert as it also gives out a nice aroma while making this. This is one of my favourite indian sweets. There can be lots of variations of Rabdi / Rabri by adding fruits like Mango, Apple etc, in the recipe. Made it & posted this today as it is a special day for me.


 
Prep Time :  5-10 mins
Cooking Time : 20 - 30 mins
Serve : 2 People

Ingredients
  • Full fat milk - 4 cups
  • Condensed milk - 2 tsp
  • Sugar - 2 tsp (Acc to taste)
  • Almond crushed - 1 tsp
  • Pistachios crushed - 1 tsp
  • Cardamom powder - 1/4 tsp
  • Kesar / Saffron - few strands
Method
  1. Dissolve the saffron / kesar into 1 tsp of warm milk and  keep aside
  2. Take a heavy bottom nonstick pan. Add milk bring to boil stirring continuously till milk reduce quantity
  3. Add sugar and condensed milk stir till becomes thick in the medium flame
  4. Add kesar and crushed almonds and pistachios mix well
  5. Remove from the fire. Cool completely and refrigerate 
  6. Serve chill

Broccoli Pulao

Easy for brunch along with any gravy side dish. Broccoli is good for health as everyone knows. One pot rice dish is always simple to make, not much time needed too. Try it. For this rice i made a Paneer Kurma i feel it is a good combo. Will post the paneer kurma in my next post.



Prep Time : 15 mins
Cooking Time : 15 mins
Serves : 2 People

 Ingredients
  • Broccoli florets - 1 cu
  • Basmati rice - 2 cup
  • Green chilli, chopped - 2 -3 (medium hot)
  • Onion chopped - 1/4 cup
  • Ginger chopped - 1/2 tsp
  • Garlic chopped - 2 cloves
  • Clove - 2 
  • Black pepper - 3
  • Cinnamon - 1/2 piece
  • Cardamom - 1 
  • Salt to taste
  • Olive oil / Oil - 5tbsp
Method
  1. Roast cinnamon,cardamom, clove and pepper and make a fine powder , keep aside
  2. Cook the rice in the rice cooker
  3. Boil the broccoli florets adding little water until tender
  4. Heat oil in a pan add onions, ginger, garlic, chillies fry for 3 mins
  5. Add broccoli florets again stir fry
  6. Add masala powder, rice &  salt mix well
  7. Serve hot
