Methi Corn Pulao

Last weekend wanted to try something new and easy to make. Came out very tasty.

Cook Time : 15 Mins
Serve : 2

Ingredients
  • Methi Leaves / Fenugreek leaves - 1 & 1/2 cup
  • Corn kernels - 1/2 cup (Frozen)
  • Pulao powder - 2 tsp (i used MTR)
  • Onion  - 1/2 cup,  chopped
  • Green Chillies - 2 ( medium hot)
  • Nutmeg powder - 1/2 tsp
  • Oil - 5 tbsn
  • Ginger + Garlic Paste - 1 tsp
  • Clove - 2
  • Cinnamon sticks - 2 small pieces
  • Salt to taste
  • Basmati Rice - 2 cups

Method
  1. Wash and soak the rice for 10 mins then drained the water
  2. Take a pan add oil then add cinnamon sticks, cloves 
  3. Add chopped onions fry then add methi leaves and corn , chillies and ginger garlic paste stir fry
  4. Add pulao powder and nutmeg powder salt mix well allow to cook leaves
  5. Add into rice add water 1 & 1/4 cup
  6. Mix well and cook it in the rice cooker or pressure cooker
  7. Serve hot with yogurt / pachadi / raita

Rave Ganji / Semolina Porridge

Rave Ganji / Semolina Porridge this is quick and wonderful recipe. I would say this is the one of the diet recipes. My amma (mom) used to prepare this every day after my delivery to aide my diet. This is sort of liquid in texture and not thick like kesari bath / sajjige. Since this is easy to digest & tasty, this dish helpful for old people (not much to chew) and also it is good for someone sick.




Prep Time :  2 Min
Cooking Time  : 5 Min
Serves - 2

Ingredients
  • Rave / Simolina -  2 tsp
  • Milk - 1/2 cup
  • Water - 1/2 cup
  • Sugar - 3 tsp ( Adjust to taste)
  • Cardamom powder / Ealashi / Ealchi - 1/3 tsp
Method
  1. Roast rava in the small pan 
  2. Take a pot / pan combine milk and water boil 
  3. Add slowly rava 
  4. Then allow to cook rava
  5. Then add sugar and cardamom powder. Mix well
  6. Serve hot

Rice Stuffed Bellpeppers

Colorful Capsicums / Rice stuffed Bell peppers.

This is normal fried rice and garnished with mozzarella grated cheese and baked in the oven. Not a very complicated recipe.. 

Prep Time :  15 Mins
Baking Time :  10 to 15 Mins
Serves :  2

Ingredients
  • Red Pepper - 1
  • Orange Pepper - 1
  • Yellow Pepper -1 
  • Basmati Rice, Cooked - 1 Cup
  • Onion, chopped - 1
  • Tomato chopped - 1/4 cup
  • Pulao Powder - 1/2 tsp
  • Oil - 2 tbsp
  • Salt to taste
  • Grated Mozzarella cheese (optional)  - 2 tsp
Method
  1. Pre heat the oven 400F
  2. Cut top of peppers and remove seeds
  3. Heat oil in a pan add chopped onions fry till golden color then add chopped tomatoes 
  4. Add pulao powder, salt and mix well
  5. Add cooked rice and stir well 
  6. Take a spoon full of mixture into peppers evenly 
  7. Then top of cheese 
  8. Arrange the stuffed peppers on a baking tray bake at 350F for 10 Mins
  9. Serve hot

Cheese Sticks

Cheese Sticks Kids favorite cheesy sticks for snacks or for school lunch boxes or travel. Homemade mozzarella sticks with marinara sauce or ketchup yummmy right!!. Very simple recipe, dipped in corn batter and fried in the oil to make it a crispy golden stick.




Prep Time :  20 Mins
Cooking Time :  10 Mins
Serve : 2
 
Ingredients
  • Mozzarella Sticks - 1 packet
  • Corn Flour - 1  cup
  • Maida / All Purpose Flour - 1/4 cup
  • Itlian Herbs - 1/2 tsp
  • Oregano powder - 1/4 tsp
  • Salt to taste
  • Red chilli flakes - 1/4 tsp
  • Bread crumbs 
Method
  1. Cut the cheese sticks into thin sticks.
  2. Mix the corn flour, maida / APF , and italian herbs, oregano, salt , chilli flakes make a dough using water not too thick not too thin its medium
  3. Dip each cheese sticks  into batter and roll them into bread crumbs and keep it in the freezer for 10 mins
  4. Heat oil in a pan and deep fry till golden brown
  5. Serve hot with ketchup or marinara sauce.
