Nellikai Pani Puri - Gooseberry Pani Puri - Amla Pani Puri

Colorless Paani for PaniPuri made out of Amla (gooseberry). Gooseberry is Nellikai in kannada and Tamil. Amla in Hindi. Healthy drink as well, rich in Vitamin C.

Prep Time : 30 Mins

Ingredients
  • Paani Puri Recipe -  Puri ( I used store bought puri's )
  • Gooseberry / Nellikai / Amla - 5 nos
  • Lemon / Lime juice - 2 tbsp
  • Salt to taste
  • Black salt - a pinch
  • Green chillies - 1
  • Coriander leaves - 1 tsp chopped
  • Chaat masala powder a pinch
  • Ginger - a small piece, grated
  • Sugar - 1/4 tsp
Ingredients for topping of the pani puri
  • Peas / Mutter / Buttani - 1 cup (Cooked)
  • Aloo / Potatoes - 1 cup (cooked(mashed))
  • Carrot - 1 cup (grated)
  • Yellow onions - 1 cup (finely chopped)
Method for pani
  • Remove seeds & Grate the gooseberries add 1/2 cup of water and cook them in a pan or use pressure cooker to cook(without water)
  • Blend the cooked gooseberries/nellikai , green chillies, coriander, ginger into a coarse 
  • In a muslin cloth or cheese cloth put all the mixture tightly make a knot and put it in the pan 
  • Add 3 cups of water and keep aside for about 20 mins. In between open the cloth knot and press hard using spoon to strain the coarse mixture to get flavor. 
  • Then add salt , chaat masala, black salt, sugar and lemon juice
  • Stir well add water if necessary , adjust the salt and sugar and lemon juice if needed. 
  • Keep refrigerator if needed or served as room temp. Remaing pani can be keep regrigerator long last 1 week
Assembling  Pani puri
  1. Take a puri crack a small hole in the center 
  2. Fill little potatoes, peas, carrot, onions and immerse it in the chill pani and eat immediately

Spring Rolls

Healthy Spring Rolls filled with colorful veggies. I have adapted Ree Drummond's ( celebrity chef ) recipe.

Prep Time : 20 Mins
Cook Time : 10 Mins

Ingredients
  • Paneer or Tofu (i used paneer) roast & Chopped - 1/2 cup
  • Roasted Peppers & Chopped lengthwise - 1 cup
  • Carrot julienne - 1 cup
  • Spring onions / Green onions - 1/2 cup
  • Shredded Cabbage - 1/4 cup
  • Sesame oil - 2 tbsp
  • Sriracha (chilli sauce) - 1 tbsp
  • Vinegar  - 1 tsp
  • Soy sauce - 1 tsp
  • Sprinkle salt - 1/4 tsp
  • Lettuce , chopped into pieces - 1 cup
  • Noodles boiled  - 1 cup 
  • Rice paper wrappers - 1 packet
Method
  1. boil the noodles, drain and keep aside
  2. Take a grill pan roast the panner and chop them into length 
  3. Rub the peppers with the oil , roast the bell peppers / capsicum on  gas stove once roasted all the sides and place them into a paper bag cover tight wait for 10 mins them scrape outer roasted part then chop into julienne
  4. Place the veggies in a bowl add peppers, paneer drizzle in the soy sauce, sesame oil, chilli sauce , vinegar & sprinkle salt
  5. Rice paper wrappers by placing them one by one into warm water for 20secs and remove spread it in a damp cloth 
  6. To assemble place small amount of noodles strings then lettuce then veggies fold the sides of the wrappers gently then roll it into a tight roll. Repeat the rest of the wrappers 
  7. Serve with hot chilli sauce or any dipping sauce

Valaipoo Karimbdh | Bale Hoovu Palya | Banana Flower Curry

Hope you all had a wonderful Holidays! I am back after a long break.

Coming up a new recipe Valaikaipoo in tamil(iyengar), In Kannada BaleHoovu Palya it is very rich protein and best for white rice and rasam rice. Banana flower prepared for cooking by oil or boiled or pressure cooker.It takes longer time and also remover outer part.

PrepTime : 20 Mins
Cooking Time : 25-30 Mins

Ingredients

  • Valaipoo / Banana Flower - 1
  • Karivappale / Curry leaves - 1 string
  • Pachmalaka / Green chillies - 1 or 2, chopped
  • Thenga / Coconut grated - 2 tbsp
  • Yenmchinga rasu / Lemon juice - 1 tbsp
  • Salt to taste
  • Kothambri / Corinader leaves - 2 tbsp chopped
Tempering
  • Oil - 2 tbsp
  • Kadag / Mustard seeds - 1/2 tsp
  • Kadalparppu / Chana Dal(split yellow dal) - 1 tsp
  • Perigyaum / Hing / Asafoetida - 1/4 tsp

Method

  1. Remove all the leaves as shown in above pictures 
  2. Chop them finely and soak in a water or neer mor (buttermilk) cook in a medium flame with water or place it in the pressure cooker wait until one whistle ( do not add water to the chopped flower)
  3. Take a pan heat add oil then add mustard seeds allow to splutter then add chana dal , chillies, hing, curry leaves stir fry till dal turns golden color then add cooked flower stir fry 
  4. Add salt and coconut saute for few mins. Remove from the stove 
  5. Add lemon juice and coriander leaves serve with hot white rice or rasam rice
