My family love quesadilla. This is a little spicy and cheesy. I have made this very often because my son, who is a very choosy eater, likes this and specially asks me for it.
Perfect for dinner too. Very less time needed to make it and also with healthy filling (atleast for kids).

Ingredients
- Tortillas - 1 packet (Small Size)
- Tomatoes - 1/4 cup , chopped
- Onions - 1/4 cup, chopped
- Corn Kernels - 1/2 cup (frozen)
- Capsicum / Green bell peppers - 1/4 cup, chopped
- Black pepper powder - 1/2 tsp
- Salt to taste
- Lemon juice or Vinegar - 1/2 tsp
- Green chillies or Jalapeno - few , chopped
- Cumin powder / Jeera powder - 1/2 tsp
- Garlic - 1/4 tsp, crushed
- Cilantro / Coriander leaves - 2 tsp, chopped
- Olive oil - 2 tbsp
- Cheese - Taco Blend & Mozzarella - 1 cup
- Take a pan heat oil add chillies, onions, capsicum stir fry
- Then add garlic, corn and tomatoes stir fry
- Add salt , cumin powder, black pepper stir fry for few mins
- Then add coriander leaves / cilantro, lemon juice
- Stir well and remove from the hob
- Heat a skillet or grilled pan (flat pan)
- Add tortilla roast both the sides and on one side spread the corn mixture and sprinkle cheese
- Fold tortilla on the other side leave for 2 mins
- Transfer quesadillas to cutting board
- Cut into half pieces
- Serve with Guacamole and Sour Cream
