Benne Murukku (Butter Murukku)

Benne means butter in kannada and murukku / chakli means savory snack in South India.  This snack available in all bakeries , condiments shop etc., There are so many variations of this murukku. This is the one i makes at home all the time.





Prept Time : 10 Mins
Cook Time  : 20 -30mins

Ingredients
  • Rice Flour - 2 cups 
  • Urad dal flour - 3/4 cup
  • Butter (unsalted) -  80grms
  • Asafoetida / Hing / Peryangayum - 1/4 tsp
  • Salt to taste
  • Jeera seeds  - 1 tsp
  • Oil - 500ml (to deep fry)
Or use Chakli flour

 Method
  1. In a large bowl mix all the ingredients except oil.
  2. Or Take a 2 cups of Chakli flour / powder mix with butter, salt , hing and jeera .
  3. Knead the mix gently into a dough with enough using water
  4. Fill the medium size dough ball into a chakli press
  5. Press the dough into hot oil like sticks. 
  6. Deep fry till golden color over low flame. Remove and place it on paper towel and let it cool and store it in airtight box.
Note :  Close the lid with remaining dough rest for next batch. If it is too thick for next batch sprinkle little water and again knead.

Apple Rabdi

Hi Everyone,

Mala's Kitchen is stepping into 8th year. I want to thank my Mom (amma) & my husband who is helping me all the time for everything. Most importantly I want to thank my blog readers & viewers who motivate me to keep my interest alive.

For celebrating the 9th Anniversary of my blog I have made a sweet dish called "Apple Rabdi (or Rabri)".

I have made a small variaton to the regular plain Rabdi and it has been laced with apple flavour.  I felt this is an easy & a good way of enhancing the flavour of rabdi.




Prep Time : 10 Mins
Cook Time : 20 Mins
Yield - 2-4

Ingredients
  • Red Apple - 1
  • Milk - 250ml
  • Sweet Condensed milk - 1/4 cup (adjust the taste)
  • Almonds / Badam - crushed , 1 tbsp
  • Pistachios / Pista - crushed , 1 tbsp
  • Saffron / Kesar - a pinch (warm milk and saffron mix it)
Method
  1. Wash and peel the apple and finely grate and keep aside
  2. In a heavy bottom pan boil the milk in a simmer until thick/creamy then add apple and Stirring in between 
  3. Add condensed milk again boil for a while 
  4. Then add crushed almonds and pista and saffron  stir again cook for 3-4 mins. Remove pour into serving dish
  5. Serve hot or cold
Note : Milk is not thickned add a teaspoon of plain breadcrumbs. Then instead of condensed milk use sugar according tothe taste.

Broccoli Tikki

Tried best healthy snack broccoli tikki. It tastes good! now a days i add broccoli for all most all the recipes like pulao, curries,biryani, soup, salad etc., 




Prep Time : 10 mins
Cook Time : 20 mins

Ingredients
  • Broccoli florets - 2 cups
  • Potato - 1/2 cup (boiled & mashed)
  • Onions - 1/4 cup ( i used dried onion flakes)
  • Paneer grated (optional) - 1/4 cup
  • Cheese grated (optional) - 1/4 cup
  • Ginger + Garlic paste - 1/4 tsp
  • Green chilli - 1/2 tsp(finely chopped) or paste - 1/2 tsp 
  • Lime / Lemon juice - 1 tsp
  • Salt to tste
  • Rice flour - 2 tbsp (for binding)
  • Bread crumbs - (for coating)
  • White Sesame seeds 
Method

  1. Cook the broccoli florets. Drain the water (use someother cooking purpose).
  2. Boiled the potatoes and mash them and keep aside. Mash the broccoli florets using potato masher or pulse them into food processor. (i used food processor)
  3. Mix broccoli , potatoe, rice flour , salt, lemon juice, green chilli paste, ginger garlic paste , dried onions flakes and add either cheese or paneer or both
  4. Mix all and divide the mixture into small size portions
  5. Roll them into tikki shape and press firmly on the bread crumbs then on top of small tikkis sprinkle sesame seeds
  6. Heat tava sprinkle olive oil or regular cooking oil place them on tava each tikkis and cook on both the sides and serve with chutney or ketchup or chilli sauce
Note : Why i used dried onions because  most kids don't like onions. So i added dried onions and also it combines very well together and taste /flavor is the same.
If using raw onions finely chopped in a small pan heat 1 tsp of oil and fry onions for few mins. and add into broccoli.

Paneer Pizza

Made  pizza with a twist using paneer and other veggies.  Anything with paneer my family likes it. Paneer and veggies marinated with Indian spice. Usually made it using ready made pizza base and sometimes made pizza dough at home. Pizza dough making, i feel, is a very tedious process that too with little kids around and also with other daily chores. Using a ready made Pizza base does not give the satisfaction of making a pizza. This time around i made the pizza base myself and then added panner veggies like onions, capsicum/green peppers, cheese. Toppings can be changed to suit ones likes. It came out very soft and light & also very tasty based on my son's comments :).




Prep Time : 15 Mins
Baking Time : 20 Mins
Serves : 2 - 4


Ingredients
  • All purpose  flour  / Maida ( + extra for dusting) - 1 & 1/2 Cup  
  • Salt - 1 tsp
  • Active dry yeast - 1 tsp
  • Olive oil  - 1tbsp
  • Lukewarm water - 6 tbsp
Toppings :
  • 3/4 Cup Prepared pizza tomato sauce 
  • 1/2 Cup Mozzarella cheese
  • 1/2 Cup Paneer small cubes
  • 1/4 Cup Capsicum (green or any color) cubes
  • 1/4 Cup Tomato cubes 
  • 1/4 Cup Onions cubes
Marinate the Paneer and Veggies
  • 1/4 tsp Garlic paste
  • 1/4 Cup Plain yogurt / Desi curds 
  • 1/4 tsp Salt / to taste
  • 1/4 tsp Cumin powder / Jeera powder
  • 1/4 tsp Red chilli poweder 
  • A pinch turmeric
  • 1/4 tsp Kitchenking Masala powder
Method
  1. Sift the flour and salt together into a bowl and stir in the yeast.
  2. Make a well in the center and pour in the oil and water. 
  3. Stir well with a wooden spoon until the dough begins to come together, then knead with your hands until it leaves the side of the bowl. Knead 5-10 mins knead by hand (i used food processor to knead)
  4. Cover with a damp dish towel. Let rise in a warm place for 1 hr. until the dough has doubled in volume.
  5. In a bowl mix yogurt/curds, salt, turmeric, jeera powder, chilli powder, kitchenking masala powder beat the curds well and add onions, paneer, tomatoes, capsicum(peppers) mix well and keep aside for 5-8 mins
  6. Heat the grill or tawa sprinkle olive oil grill the marinated paneer and veggies drain the remaining marinated curds. Roast  lightly after done keep aside
  7. Brush a pizza tray with oil. Turn out the dough onto a lightly floured counter, punch down with your fist, and knead for 1 min. Roll or press out the dough to round shape. Place on the prepared pizza tray push up the edge slightly all around. 
  8. Preheat the oven 450F / 200 C. Spread the tomato sauce, add marinated grilled paneer and veggies ,Sprinkle cheese.
  9. Bake in the preheated oven for 20-30mins,  until the crust is golden brown and crisp
  10. Serve immediately
