Veg Panini

One of my all time favorite. Made at home, the easiest healthy sandwich. If want to eat simple, healthy food which can be made when you are in a hurry .. This would be the rice. Don't scratch your head if you do not have a Panini maker once can make it on the griddle pan which has lines in it .. Tomato Basil Soup would go very will with a hot panini.. yum!!!

Prep Time : 15 Mins
Cook Time : 10 Mins
Serves : 4


  • Bread slices - 8 
  • Spinach leaves 
  • Fresh Mozzarella Cheese slices -  6
  • Salt & Pepper for drizzling
  • Olives chopped  - 1 tsp
  • Pickled Jalapeno peppers chopped - few (optional)
  • Onions - slices
  • Basil pesto sauce - for drizzle
  1. Make all the ingredients ready before start preparations
  2. Heat the griddle place the bread slices 
  3. Roast both sides 
  4. On the one side place cheese , spinach leaves , drizzle the salt and pepper 
  5. Then olives, jalapeno, onion slices all one after the other then finally apply pesto sauce
  6. Place on another bread on top like sandwich wait for few mins on the griddle
  7. Serve with hot soup
