Berries - Smoothie (Rasberry and Strawberry)

Summer is around the corner. We need some refreshing drinks. My event is also on. So posting this delicious smoothie for both reasons. 







Prep Time : 10 Mins
Serves : 4

Ingredients
  • Strawberry - 2 cups
  • Rasberry - 1 cup
  • Banana - 1/2
  • Strawberry yogurt - 1/4 cup
  • Ice cubes 
 Method
  1. In a juicer blender blend all the ingredients 
  2. Strain the smoothie and serve

Clementine & Pineapple Juice

Just made a juice from both the fruits and it tasted really delicious. It was also very refreshing. 






Prep Time : 10 Mins
Serves : 4

Ingredients
  • Pineapple Chunks - 2 cups
  • Clementine / Oranges - 4 count , peeled and segmented
  • Sugar - 1 tsp
  • Chilled water - 1/2 cup
  • Orange juice - 1/2 cup 
  • Ice cubes 
Method
  •  In a juicer blender add all the ingredients and blend into a smooth puree 
  • Strain the juice and serve






Kartharkai Yengai | Badnekayi Yengai

I have already posted this long time back. That is also a Kartharkai yengai. But the only diffference is a grinded masala which is added to it. This gives a little different taste. Kartharkai is a Tamil/Iyengar word for Eggplant/Brinjal.






Prep Time : 15 Mins
Cook Time : 10 Mins
Serve : 2

Ingredients
  • Green karthirikayi / Brinjals - 10 count
  • Yengai Powder - 4 tbsp
  • Coconut - 4 tbsp
  • Curry leaves - few
  • Asafoetida / Hing - a pinch
  • Salt to taste
  • Oil - 4 tbsp
  • Tamarind paste or juice - 1 tsp for juice / 1/4 tsp for paste
  • Jaggery - a little piece to taste
Method
  1. Wash and chop the eggplant into big pieces. 
  2. Heat oil in  large pan 
  3. Add mustard seeds , hing, curry leaves. Wait until mustard seeds allow them to splutter
  4. Then add egg plant stir fry on medium flame
  5. Sprinkle little water and close the lid. Cook until tender / soft
  6. In the mean while blend the coconut and yengai powder along with little water make a smooth paste
  7. Stir the eggplant , sprinkle salt , yengai paste , tamarind paste and jaggery add one by one.
  8. Stir well allow to cook for few mins then transfer into a bowl and serve with chapati or roti.

Healthy Diet Event - Berries (Fruits)

Hello Friends

I just had an idea to start healthy diet event like fruits (Berries)
To make it easier for you, I've pulled together nutrition tips and suggestions for foods that you and your kids will love. We need some fat in their diets to stay healthy — so for that, Fruits and vegetables are like nutrition.They make your plate more colorful and they're packed with vitamins and fiber.


Being healthy and having a good diet is more important to our health and also our life style. Fruits always make comfortable diet. I feel instead of concentrated juice, smoothies etc i like to have it fresh ones and homemade. We all love to have fruits or berries like that with out adding sugar, milk, water etc. We also get organic fruits.

So here is the event announced by Priya. She made this event to stay healthy in different varieties  of diet. She did a great job to enlist and give opportunity to host the event in each month. I would like to thank her for this opportunity and starting a wonderful event.

Dates Ladoo | Khajur ke Ladoo | Kharjura Unde

This one is quick sweet recipe.  Dates are very sweet and also good for health. We can eat it just like that, both the dried & ripe ones. These are also used for sweets / desserts.  Since everyone knows about these I will directly head to the recipe.  I made it and it came out very nice. The sweetness also mostly comes from the Dates itself.  I also added different coatings for this ladoo.

Prep Time : 15 Mins
Cook Time : 5-8 Mins
Makes - 10 Ladoos

Ingredients
  • Dates fruits deseeded - 2 cups
  • Jaggery - 2 tbsp , grated
  • Cardamom Powder - a pinch
  • Nuts - Almonds, Cashews, Pistachios, Walnuts ( chopped) - 3 tbsp
  • Ghee - 1 tsp
  • Roasted Sesame seeds , Coconut powder , Roasted PoppySeeds 
Method
  1. Blend the dates into a smooth paste
  2. Take a pan add jaggery and sprinkle water and bring to boil until jaggery becomes froth   
  3. In the mean while in a small pan add ghee and add nuts and fry till lightly roasted
  4. Then add nuts to jaggery add ground dates mix well 
  5. Add cardamom powder stir well mixture tuns thick and leaves side of the pan and turn off the flame
  6. Once it is cool slightly make a even size balls and roll them into different coatings
  7. Serve and store it in airtight box. It stays for one week but not for coconut coating. It is stored in refrigerator can last more than a week.

Coconut Ladoo

This is quick sweet recipe. Can be prepare on any festivals or on normal days too. In my kitchen pantry..there is a Condensed Milk. Then i got an idea why don't i try making some ladoo. otherwise I noticed  that the can is out of date.I made it and within 2 days it was finished off...Loved by my family. I am sure kids will enjoy it too.









Prep Time : 5-8 Mins
Cook Time : 5 Mins
Makes - 8-10 Ladoo's

Ingredients
  • Sweetened Condensed Milk or Milkmaid - 14oz (396g)
  • Desiccated Coconut powder - 1/2 cup + extra for coating 
  • Nuts - Cashews , Walnuts, Pistachios, Almonds and Raisins - 2tbsp (chopped)
  • Ghee (clarified butter) - 1 tsp
  • Sugar - 2 tsp
  • Cardamon Powder - 1/2 tsp
Method
  1. Heat non stick pan add ghee then add all nuts fry till lightly roasted and transfer into another plate
  2. In the same pan add coconut lightly roast and transfer into same plate
  3. In the pan add condensed milk and coconut cook on low flame and mix well 
  4. Then add sugar and cardamom powder stir again add all chopped nuts and mix well until mixture tuns thick and leaves side of the pan and turn off the flame
  5. Once it is cool slightly make a even size balls and roll them into desiccated coconut
  6. Serve
