Tomato Juice

Refreshing tomato juice. All these years i haven’t posted this juice although I make it regularly in summer. This is one of my favorite juice. My mom used to make this every year in the tomato season along with tomato jam.



 Prep Time : 10 Mins

Ingredients
  • Tomatoes - 6
  • Mint leaves - 5 leaves
  • Lemon juice - 2 drops
  • Sugar - 2 tbsp
  • Chilled Water - 2 cups
  • Ice cubes 
Method
  1. Blend tomatoes , mint leaves, lemon juice, 1/2 cup water and sugar make a smooth puree
  2. Then strain the puree inthe pan and add water and stir well 
  3. Serve or Refrigerate whenever needed

Corn Cheese Quesadilla

My family love quesadilla. This is a little spicy and cheesy. I have made this very often because my son, who is a very choosy eater, likes this and specially asks me for it. Perfect for dinner too. Very less time needed to make it and also with healthy filling (atleast for kids).

Cooking Time : 10 Mins
Serve : 4

Ingredients
  • Tortillas - 1 packet (Small Size)
  • Tomatoes - 1/4 cup , chopped
  • Onions - 1/4 cup, chopped
  • Corn Kernels - 1/2 cup (frozen)
  • Capsicum / Green bell peppers - 1/4 cup, chopped
  • Black pepper powder - 1/2 tsp
  • Salt to taste
  • Lemon juice or Vinegar - 1/2 tsp
  • Green chillies or Jalapeno - few ,  chopped
  • Cumin powder / Jeera powder - 1/2 tsp
  • Garlic - 1/4 tsp, crushed 
  • Cilantro / Coriander leaves - 2 tsp, chopped
  • Olive oil - 2 tbsp
  • Cheese - Taco Blend & Mozzarella - 1 cup
Method
  1. Take a pan heat oil add chillies, onions, capsicum stir fry 
  2. Then add garlic, corn and tomatoes stir fry
  3. Add salt , cumin powder, black pepper stir fry for few mins
  4. Then add coriander leaves / cilantro, lemon juice 
  5. Stir well and remove from the hob
  6. Heat a skillet or grilled pan (flat pan)
  7. Add tortilla roast both the sides and on one side spread the corn mixture and sprinkle cheese 
  8. Fold tortilla on the other side leave for 2 mins
  9. Transfer quesadillas to cutting board
  10. Cut into half pieces 
  11. Serve with Guacamole and Sour Cream

Inji Mor | Neru Mosaru

This is the tamil word. Neer is water , mor is buttermilk. Inji is a ginger in tamil. Neeru Mosaru is kannada words. My family loves this after heavy food this must be needed. It is a ginger flavor and its very digest drink. In Hindi it is called Chaas masala buttermilk. It is good to have it in the summer hot weather. Refrigerate 1 or 2 days.




Prep Time : 10 Mins

Ingredients
  • Thick Yogurt / Curds - 2 cups
  • Chill Water  - 500 ml (1/2 ltr)
  • Salt to taste
  • Curry leaves - few leaves
  • Coriander leaves - little tsp
  • Green chillies - a pinch piece
  • Ginger - a piece 
Method
  • Blend in the mixer 1/2 cup yogurt / curds along with curry leaves, coriander leaves, a little piece of chilli, ginger
  • Pour into remaining yogurt / curds , salt and chilled water, whisk the buttermilk well and served chilled
  • Refrigerate whenever needed
