Veggie Tacos

First time i tried veggie tacos. I wasn't sure about how the flavor and taste will be. But these tacos were really so tasty. Added Grilled vegetables, blend with taco sauce and garinished with avacado &  tomatoes. My children enjoyed it!!

Serve - 4

  • Tacos (
  • Paneer Slices 
  • Eggplant Slices 
  • Onions Slices
  • Capsicum / Bell Peppers Cubes
  • Tomatoes, Chopped finally
  • Avacado , Chopped into cubes
  • Heat taco shells according to package directions. 
  • In a large grill skillet roast the panner , bell peppers, eggplant & onions
  • Drizzle some olive oil and roast the veggies until crisp and tender. Sprinkle with salt
  • Drizzle taco sauce (sauce comes along with the taco packets) Saute
  • Tranfer into bowl arrange the taco shells and fill the roasted veggies 
  • Garnish tomatoes ,avacados , grated cheese & serve with sour cream.

Mango - Banana Smoothie

Mango & Banana is a very good combo and healthy too. This is the one quickly prepare serve with breakfast. My little boys loved it also it's summer time.

Prep Time : 5 Mins
Serve : 4

  • Mango (Peeled and cubed ) - 2 cups
  • Ripe Banana - 1 
  • Almonds - 4 count
  • Heavy or Light Cream ( i used Tuscan cream) - 1/2 cup
  1. Combine all the ingredients into a blender. Blend until smooth
  2. Serve immediately

Mango Ice Cream

Mango Ice cream is a delicious dessert. Easy to make .. In Mango season makes various kinds of dish, desserts out of it.

Prep Time  : 15 Mins
Cook Time : 10 Mins
Serves : 4

  • Mango Pure (Preferably  Alphonso Mangos) - 1 cup
  • Milk cream - 2 cups
  • Condensed milk or Milk maid - 1/2 cup
  • Sugar - 2 tsp
  • In a non stick pan add condensed milk over low heat. 
  • Add milk cream and sugar boil a minute. Remove from the flame. Let it be cool
  • Meanwhile make a mango puree in the blender
  • Mix puree to the milk mixture whisk well
  • Pour into container cover and freeze till firm. Serve

Mango Kulfi

Mango Kulfi is the dessert in summer / hot weather. Simple recipe with minimal ingredients. Kulfi is the traditional indian ice cream and many ways to prepare and also makes various flavours , mainly put in cone type of moulds. I used candy / pop moulds.

Prep Time : 15 Mins
Cook Time : 15 Mins
Makes : 6 Kulfi (varies size of the moulds)

  • Milk - 500 ml
  • Mango puree - 1 cup
  • Milk powder / Mawa powder - 1 cup
  • Milkmaid or Condensed milk - 1 cup
  • Saffron strands - few
  • Cardamom powder - a pinch
  1. Take a heavy bottom pan. Add milk bring to boil on low flame
  2. Then add slowly condensed milk and milk powder , stir 
  3. Cook for few mins until it becomes thick then add saffron and cardamom powder
  4. Remove from the flame cool little bit then add mango puree stir , mix well
  5. Pour into kulfi moulds and place it in the freezer for few hours
  6. Unmould the kulfi placing it under the tap water. Pull the stick and serve
