Paneer Manchurian

Paneer Manchurian This dish is a starter / Appetizer. Similar like Gobi Manchurian and quite easy to prepare.

Note : Same batter can be used for both cheesy potato and Paneer Manchurian

Serves : 2

Ingredients
  • Paneer - 2 cups
  • Onion - 1/4, chopped
  • Spring Onions - 1/4 cup , chopped
  • Capsicum / Green Bell pepper - 2 tbsp
  • Salt to taste
  • Soy sauce - 2 tsp
  • Chilli sauce  - 2 tsp
  • Ajinomoto - a pinch
  • Garlic, chopped - 1/2 tsp
  • Olive oil - 2 tbsp
Other Ingredients for batter
  • Corn flour - 4 tsp
  • Maida / All purpose flour - 2 tsp
  • Red chilli powder - a pinch
  • Salt to taste
  • Baking soda - a pinch
  • Pepper powder - a pinch
  • Water - 1/4 cup (as per need)
  • Oil - to deep fry

Method
  1. Cut the paneer into triangle shape
  2. Mix all the batter ingredients and make a medium thick using water (as per need)
  3. Dip each paneer pieces and deep fry till golden color and remove drained into paper towel
  4. Heat oil in a wok / large pan add olive oil 
  5. Add garlic, onions, spring onions, capsicum and ajinomoto fry in the high flame
  6. Add paneer then add soy sauce and chilli sauce 
  7. Add salt mix well and serve hot

Cheesy Potatoes

Kids fav veggie potato ...I adapted this snack / appetizer from the Taco bell menu (Cheesey Potato Fiesta). I have used my own method to make it. One of the best after school snacks. 


Prep Time : 10 Mins
Cook Time  : 10 Mins
Serve - 2

Ingredients
  • Potato cubes - 2 cups
  • Sour cream - 4 tsp
  • Cheese - 4 tsp (heat up a sec in microwave)
  • Oil - Deep fry
Ingredients for Batter
  • Corn flour - 4 tsp
  • Maida / All purpose flour - 2 tsp
  • Red chilli powder - a pinch
  • Salt to taste
  • Baking soda - a pinch
  • Pepper powder - a pinch
  • Water - 1/4 cup (as per need)
 Method
  1. Wash and peel the potatoes and cut into cubes evenly
  2. Mix the batter ingredients and make a medium thick batter
  3. Heat the oil and add potatoes into batter and deep fry
  4. Take a serving bowl add fried potatoes and top of pour cheese and on top of cheese pour sour cream
  5. Serve

Mensinakai Bonda / Mirchi Bonda

This is my dad's favorite snack and when he was visiting us last year i couldnt make it for him. Today is father's day so made his favorite snack. I have tried many times but still the chillies are ended up being too hot to eat. I got an idea to soak it in the sour buttermilk for a whole day to take off the heat. Dipped in the besan flour (gram flour)and deep fried it. Serve it with chutney & it was really yummy. Also made a cake as my son wanted to make one for his dad :). Happy Fathers day to all.

Serves : 2

Ingredients

  • Light green long chillies - 6 
  • Besan / Gram flour - 1 cup
  • Rice flour - 1/4 cup
  • Baking soda - a pinch
  • Salt to taste
  • Red chilli powder - 1 tsp
  • Water - 1/2 cup
 Method
  1. Slit the chillies and remove all  seeds and Soak the chillies in the sour buttermilk and 1tsp salt for whole day
  2. Drained all the buttermilk thoroughly 
  3. In a bowl mix besan, rice flour, soda, chilli powder, salt and add water(as per need) and make a medium thick batter
  4. Heat oil in a wok / kadai 
  5. Dip each chillies into batter and deep fry till golden color and remove and drained into paper towel
  6. Repeat with each chillies and serve hot with chutney

Soppina Palya / Soppu Karimbdh

Soppina Palya / Soppu karimbdh I havent made any simple curry / palya / karimbdh in my blog. One of my viewers requested me to post some simple one's. This is mixed all green leaves. During my growing up years, I remember that the vegetable vendor used to get very fresh green leaves & veggies right to the doorstep. All the ladies would gather around him and buy the veggies for the day. Some fond and strange (seems now) memories. This is a very simple recipe. To make it more tastier i have added toor dal and this can be made without dal too. This is best with hot plain rice or even chapatis.

(Without Toor Dal)


Prep Time : 10 Mins
Cook Time : 5 - 8 Mins
Serve : 2

Ingredients
  • Methi / Fenugreek / Menthya leaves - 1 cup
  • Dhantu / Amarnath leaves - 1 cup
  • Palak / Spinach leaves - 1 cup
  • Toor dal - 2 tsp (cooked)
  • Coconut grated  - 2 tsp
  • Salt to taste
  • Lemon juice - 1 tsp
Tempering
  • Oil - 1 tsp
  • Mustard seeds / Sasive / Kadag  - 1/2 tsp
  • Hing / Asafoetida - 1/4 tsp
  • Chana dal / Kadale bele / Kadal parapp - 1 tsp
  • Red chillies - 1 or 2

Method
  1. Finely chop and wash the leaves 
  2. Cook the leaves with 3/4 cup of water
  3. Drain the water and keep aside ( do not discard water use for other purpose)
  4. Add coconut , salt and lemon juice add toor dal ( or without)
  5. Heat oil and add mustard seeds, hing, and chana dal, chillies 
  6. Pour into palya / karimbdh
  7. Serve
