Cappuccino (Home Made Without Espresso Machine)

 Traditionally cappuccino makes in the Espresso machine. But this recipe easily prepared at home only 3 steps  : 1. Prepare the coffee foam. 2 Prepare the frothy milk. 3. Mix both and enjoy the coffee just like café taste.






Ingredients

  • Milk - 2 cups (I used 2% milk)
  • Instant coffee powder - 2 tbsp. (I used Bru (Indian brand) Coffee powder)
  • Sugar - 1 tsp
  • Warm Water - 1/4 cup
Method 
  1. Prepare coffee : Add coffee powder, sugar and warm water in a big glass. Whisked until becomes airy foam/frothy using hand blender 
  2. Prepare Milk : Heat milk in a saucepan. Heat milk and divide the milk in another pan. Whisked the milk one part until becomes airy foam/frothy using hand blender 
  3. Mix Coffee & Milk : In a tall glass, Add 2 spoon full of coffee frothy then pour hot milk then add 2 spoon full of foam milk on top of the coffee.  ( Don't add too hot milk)
  4. Sever immediately and enjoy the taste of Cappuccino without espresso machine.

Vegetable Lasagna

 The best vegetable Lasagna. This is non south Indian or Indian dish. This recipe was due from a long time. When you make it at home it feels fresh and tastes fresh too. Its quite easy to preparation. This is classic vegetarian recipe and completely my own version.  Trust me really flavorful lasagna. Some of the ingredients I have used outside market like sauce & cheese. Add any vegetables that easily available in the market/pantry.






Ingredients 

  1. Olive + Garlic mixed oil - 2 tbsp
  2. Carrots : 1/2 cup chopped
  3. Bell peppers - Red & Green 1/2 cup, chopped
  4. Onion - 1 cup, chopped
  5. Broccoli - 1/2 cup
  6. Salt - 1/2 tsp
  7. Black Pepper - 1 tsp
  8. Italian spice mix
  9. Marinara sauce ( i have used traders joe brand)
  10. Basil Pesto sauce ( i have used traders joe brand)
  11. Mozzarella cheese shredded
  12. Mozzarella cheese slices
  13. Lasagna sheets ( no boil )
  14. Lasagna dish pan
Preparations :
  • Preheat the oven 400F.
  • Chop all the vegetables. Heat olive oil in  a skillet 
  • Add vegetables stir fry for few mins
  • Add pepper powder, salt & Italian spice mix Stir fry again turn off the flame
  • In a lasagna pan add sauce and spread evenly
  • Add lasagna sheets then on top of it add vegetables spread it out evenly
  • Add Mozzarella cheese slices.
  • Repeat the same process / step until fill the pan lastly
  • Add sauce and sprinkle shredded cheese
  • Cover the pan in a foil bake for 15 mins
  • After 15 mins remove foil and bake another 10 mins 
  • Remove and serve hot Lasagna

Paneer Tikka Tacos (Indian)

Taco is a original Mexican recipe. But made with Indian style of paneer tikka and is very tasty on this crispy shells. Seasoned with mint,coriander green chilli chutney and filled with veggies. 

*This is a non-Iyengar recipes. 




Prep Time : 15 Mins
Cook Time : 10 Mins

Ingredients

  • Taco Shells 
  • Paneer Tikka (fried) - 2 cups
  • Tomato - 1 cup (chopped)
  • Onions - 1 cup (chopped)
  • Capsicum  - 1 cup  (chopped)
  • Shredded lettuce - 1 cup
  • Mint chutney + Coriander green chilli chutney - 1 cup (Chutney mixed with 1 tbsp of thick curds)
  • Shredded cheese  
Paneer Tikka :
  • Paneer cubes - 2 cups
  • Thick curds - 2 tbsp
  • Ginger,garlic paste - 1 tsp
  • Turmeric - 1/4 tsp
  • Chilli powder - 1 tsp
  • Jeerapowder - 1 tsp
  • Garammasala - 1 tsp
  • Dhanyapowder - 1 tsp
  • Kasuri methi - 1 tsp crushed
  • Salt to taste 
  • Besan - 2 tbsp
  • Riceflour - 1 tbsp
  • Breadcrumbs - 2 tbsp
  • Oil - to deep fry

Method
  1. Mix all the ingredients in a bowl and keep aside for few mins
  2. Heat oil in a pan and deep fry until golden in color
Method for Taco
  1. In a taco shell add chooped onions, capsicum, tamotoes then add 4 or 5 cubes of paneer tikka
  2. Add mint and coriander chilli chutney 
  3. Sprinkle lettuce and cheese 
  4. Then again again chutney
  5. Serve immediately

Kothimbir Vadi

Kothimbir Vadi is a very popular dish in Maharashtra. It is a best starter/snack. I have had it in mumbai and pune i think those were the best. Made pudina/mint chutney to this dish. Best combination I usually makes this when my kids come home from school this is the light best easy and tasy snack. Kothimbir Vadi can make 2 methods, fried and steamed.





Prep Time : 10 Mins
Cook Time : 5 Mins + 10 Mins (frying)

Ingredients

  • Coriander leaves / Cilantro - 1 cup
  • Green chillies - 1 (adjust as per taste)
  • Besan/Gram flour - 1 cup
  • Red chilli powder- 1 tsp
  • Salt to taste
  • Turmeric powder - 1/2 tsp
  • Oil - 1 tbsp
  • Mustard seeds - 1/2 tsp
  • Ginger + Garlic Paste - 1 tsp
  • Roasted salted peanuts - 2 tbsp (store bought)
  • Water  - 3/4 cup

Method for Fried 
  1. Coarse the peanuts and keep aside.
  2. Finely chop chillies and coriander leaves, rinse and keep aside
  3. In a bowl seve besan/gramflour, peanuts, salt, red chilli powder 1/2 tsp and turmeric powder
  4. Add water and mix well and make a batter 
  5. In a pan add oil , add mustard seeds allow to splutter
  6. Then add ginger garlic paste then add coriander leaves and chillies stir fry on low flame 
  7. Add red chilli powder 1/2 tsp and turmeric powder a pinch stir fr
  8. Add gramflour/besan mixture into the pan stir well. Transfer into barfi tray cut into desired pieces 
  9. Deep fry till golden in color serve with chutney

Method for Steamed
  1. Coarse the peanuts and keep aside.
  2. Finely chop chillies and coriander leaves, rinse and keep aside
  3. In a bowl seve besan/gramflour, peanuts, salt, red chilli powder 1/2 tsp and turmeric powder
  4. Add water and mix well and make a batter 
  5. In a pan add oil ,add mustard seeds allow to splutter
  6. Then add ginger garlic paste then add coriander leaves and chillies stir fry
  7. Add stirfried coriander mixture into the batter mix well and transfer into a flat bowl 
  8. place it in the pressure cooker cook for 8-10mins (like idli) and cut into desired pieces
  9. Serve with chutney

Jalapeno Poppers

Jalapeno Poppers stuffed in a cheese or cream cheese. This can be baked or deep fried.





Prep Time : 10
Cook Time : 10-15 Mins

Ingredients

  • Jalapeno  - 8
  • Mozzarella cheese shredded - 1 cup
  • Cheddar cheese shredded - 1 cup
  • Maida - 1/2 cup
  • Baking soda - a pinch
  • Corn flour - 1 tbsp
  • Plain Bread crumbs - 1 cup
  • Oil - for deep frying
Method
  1. Wash and cut in the middle and remove seeds wains 
  2. In a bowl add maida(All purpose flour )  corn flour and baking soda mix make a smooth batter
  3. In a tray place bread crumbs
  4. Heat oil in a pan
  5. Fill the cheese in the jalapeno then coat the jalapeno into batter then coat brad crumbs
  6. Deep fry on medium flame  till golden in color. Remove 
  7. Serve hot with dip

Cranberry Panna Cotta

Panna Cotta is an Italian dessert Made out of  Milk / cream with gelatin , fruit sauce with gelatin. Can be used as other flavors like chocolate, vanilla etc., It taste like Jell-O. My family liked this dessert. Simple to make at home. 





Prep Time : 10 Mins + Setting time : 4 hrs
Cook Time : 10 Mins

Ingredients

  • Milk - 1-1/2 cups
  • Milk Cream - 1/4 cup
  • Sugar - 5 tbsp (adjust as per taste)
  • Gelatin Powder - 1 pack (aprox 2 tsp)
  • Vanilla extract - 2 drop
Ingredients for Cranberry sauce 
  • Craberries - 1 cup
  • Sugar - 1 tbsp
  • Water - 1 cup
  • Gelatin powder - 2 tsp
Method
  • In a sauce pan add gelatin, milk and cream mix well let it sit for 3 mins. 
  • Switch on the stove stir  milk mixture on simmer then  add sugar and stir again boil on simmer
  • Add vanilla extract stir constantly remove from the stove
  • In a tall glass or bowl or dessert glass pour the milk and put it in the refrigerator freezer to chill for 4 hrs.
  • For cranberry sauce : In a sauce pan add berries and water, close the lid  bring boil to cook. 
  • Remove lid and stir once add sugar and again cook for few mins 
  • Remove from the stove in a potato masher press all the juice and strain it is thick add little water
  • In a sauce add gelatin mix well let it sit for 2 mins again boil for 2 mins 
  • Take out the milk glass after an 30mins or an 1 hr pour cranberry sauce to put it back into freezer to chill. 
  • Serve chill or unmold the panna cotta

Parfait With Carrot Cake & Nuts

Parfait is a French dessert. Layering cream, yogurt, ice cream, nuts, fruits, cakes, chocolate & fruit syrup can be used anything filled in dessert glass or tall glass. It is a cold dessert. I really love this dessert rich in flavor yum!! 







Prep Time : 10 Mins

Ingredients


  • Nuts (Almonds, Pistachios, Walnuts, Dryfruit Cranberry, Dryfruit Figs, Dates) - 1 cup
  • Carrot Cake crumbled (use any cake flavor) - 1 cup (made at home)
  • Yogurt - 1 cup (i used greek plain yogurt ) 
  • Honey - 2 tbsp
  • Rasberry for garnishing 
Method
  1. In a baking tray add almonds, pistachios and walnuts roast in the oven for 5-8 mins. Remove and let it be cool down then chop the nuts using nut cutter or knife
  2. In a bowl add nuts and finelychopped dry fruits, then add add honey mix well
  3. In a dessert glass add nuts on one layer then on top of carrot cake then on top of yogurt repeat the same layers. Garnish Rasberry serve chill or room temperature
  4. Repeat the same process for more glasses.

Falafel

Falafel is a Middle Eastern dish. I like the way served/filling with pita bread along with hummus & tahini sauce. The original version of recipe never cooked chickpeas but here i cooked the chickpeas or can be used  canned chickpeas. But I prefer soaked and cooked and then ground coarsely along with other ingredients. My kids like falafel & its vegetarian so hence i thought to sharing it here.

Prep Time : 4hr - Soaking time + 10 Mins
Cook Time : 15-20 to deep fry

Ingredients
  • Chickpeas - 2 cups
  • Onions - 1 /2 cup , chopped
  • Garlic pods - 2
  • Coriander/Cilantro leaves or Parsley  - 1/4 cup (chopped, i used coriander/cilantro)
  • Green chillies - 1 or 2 (adjust as per taste)
  • Jeera/cumin seeds - 1/4 tsp
  • Salt to taste
  • Lime / Lemon juice  - 1 tsp
Method
  1. Soak and drain and add fresh 1 cup water and place it in the pressure cooker wait until 2 whistle turn off the gas. Let it be cool
  2. In a food processor add cooked chickpeas, onions, salt, chillies, cumin, garlic, cilantro & lime juice blend to a coarse mixture. Divided the mixture into equal portion into a round balls and keep aside
  3. In a pan heat 400 ml oil , deep fry each batch 5-6 cook medium flame until golden brown in color. Drain on a paper towel
  4. Then repeat the steps 
  5. Serve with hummus or tahini

Bruschetta with Mozzarella and Pesto

This is a Italian based dish served as a snack / appetizer.




Prep Time : 5 Mins
Cook Time : 5 Mins

Ingredients

  • French Baquettes - 1 large
  • Pesto Sacue - 2 tbsp
  • Olive oil - 4 tbsp
  • Salt and Pepper - 1 tsp
  • Tomatoes slices - 4 (count)
  • Garlic - 1 tsp , grated
  • 1 pound fresh mozzarella cheese slices - 1/4"thick
  • Mint leaves - garnish
Method
  1. Pre-heat the oven 350F. 
  2. In a bowl , add pesto , olive oil, garlic mix and keep aside
  3. In a baking tray line up baquettes slices bake for 2 mins 
  4. Then remove and place cheese slices and sprinkle salt and pepper and pesto sauce bake for 3 mins till cheese melts slightly 
  5. Remove and lay a tomato slices garnish mint and serve

Spring Rolls

Healthy Spring Rolls filled with colorful veggies. I have adapted Ree Drummond's ( celebrity chef ) recipe.






Prep Time : 20 Mins
Cook Time : 10 Mins





Ingredients
  • Paneer or Tofu (i used paneer) roast & Chopped - 1/2 cup
  • Roasted Peppers & Chopped lengthwise - 1 cup
  • Carrot julienne - 1 cup
  • Spring onions / Green onions - 1/2 cup
  • Shredded Cabbage - 1/4 cup
  • Sesame oil - 2 tbsp
  • Sriracha (chilli sauce) - 1 tbsp
  • Vinegar  - 1 tsp
  • Soy sauce - 1 tsp
  • Sprinkle salt - 1/4 tsp
  • Lettuce , chopped into pieces - 1 cup
  • Noodles boiled  - 1 cup 
  • Rice paper wrappers - 1 packet
Method
  1. boil the noodles, drain and keep aside
  2. Take a grill pan roast the panner and chop them into length 
  3. Rub the peppers with the oil , roast the bell peppers / capsicum on  gas stove once roasted all the sides and place them into a paper bag cover tight wait for 10 mins them scrape outer roasted part then chop into julienne
  4. Place the veggies in a bowl add peppers, paneer drizzle in the soy sauce, sesame oil, chilli sauce , vinegar & sprinkle salt
  5. Rice paper wrappers by placing them one by one into warm water for 20secs and remove spread it in a damp cloth 
  6. To assemble place small amount of noodles strings then lettuce then veggies fold the sides of the wrappers gently then roll it into a tight roll. Repeat the rest of the wrappers 
  7. Serve with hot chilli sauce or any dipping sauce

Paneer Pizza

Made  pizza with a twist using paneer and other veggies.  Anything with paneer my family likes it. Paneer and veggies marinated with Indian spice. Usually made it using ready made pizza base and sometimes made pizza dough at home. Pizza dough making, i feel, is a very tedious process that too with little kids around and also with other daily chores. Using a ready made Pizza base does not give the satisfaction of making a pizza. This time around i made the pizza base myself and then added panner veggies like onions, capsicum/green peppers, cheese. Toppings can be changed to suit ones likes. It came out very soft and light & also very tasty based on my son's comments :).




Prep Time : 15 Mins
Baking Time : 20 Mins
Serves : 2 - 4


Ingredients
  • All purpose  flour  / Maida ( + extra for dusting) - 1 & 1/2 Cup  
  • Salt - 1 tsp
  • Active dry yeast - 1 tsp
  • Olive oil  - 1tbsp
  • Lukewarm water - 6 tbsp
Toppings :
  • 3/4 Cup Prepared pizza tomato sauce 
  • 1/2 Cup Mozzarella cheese
  • 1/2 Cup Paneer small cubes
  • 1/4 Cup Capsicum (green or any color) cubes
  • 1/4 Cup Tomato cubes 
  • 1/4 Cup Onions cubes
Marinate the Paneer and Veggies
  • 1/4 tsp Garlic paste
  • 1/4 Cup Plain yogurt / Desi curds 
  • 1/4 tsp Salt / to taste
  • 1/4 tsp Cumin powder / Jeera powder
  • 1/4 tsp Red chilli poweder 
  • A pinch turmeric
  • 1/4 tsp Kitchenking Masala powder
Method
  1. Sift the flour and salt together into a bowl and stir in the yeast.
  2. Make a well in the center and pour in the oil and water. 
  3. Stir well with a wooden spoon until the dough begins to come together, then knead with your hands until it leaves the side of the bowl. Knead 5-10 mins knead by hand (i used food processor to knead)
  4. Cover with a damp dish towel. Let rise in a warm place for 1 hr. until the dough has doubled in volume.
  5. In a bowl mix yogurt/curds, salt, turmeric, jeera powder, chilli powder, kitchenking masala powder beat the curds well and add onions, paneer, tomatoes, capsicum(peppers) mix well and keep aside for 5-8 mins
  6. Heat the grill or tawa sprinkle olive oil grill the marinated paneer and veggies drain the remaining marinated curds. Roast  lightly after done keep aside
  7. Brush a pizza tray with oil. Turn out the dough onto a lightly floured counter, punch down with your fist, and knead for 1 min. Roll or press out the dough to round shape. Place on the prepared pizza tray push up the edge slightly all around. 
  8. Preheat the oven 450F / 200 C. Spread the tomato sauce, add marinated grilled paneer and veggies ,Sprinkle cheese.
  9. Bake in the preheated oven for 20-30mins,  until the crust is golden brown and crisp
  10. Serve immediately

Chilli Tofu

Chilli Tofu tossed in spicy chilli sauce. Quick and easy starter Asian chilli tofu. I love it!!


Note : If it is too spicy decrease the amount of chillies and red chilli sauce

Prep Time : 10 Mins
Cook Time : 5 Mins

Ingredients
  • Extra firm Tofu - 1 pack (I used organic tofu)
  • Green chillies -2
  • Corn starch - 2 tsp
  • Water - 1/4 cup 
  • Spring onions - 1/4 cup
  • Garlic - 1 , crushed
  • Soy sauce - 2 tbsp
  • Red chilli sauce - 1 tbsp
  • Ajinomoto - a pinch
  • Salt to taste
  • Oil - 1 tbsp
 Method
  • Cut the tofu into cubes and keep aside
  • Chop each chillies diagonally into 4 pieces.
  • Cut the spring onions and crushed the garlic
  • Heat oil in a wok/kadai/pan add spring onions, garlic and chillies stir fry
  • Then add tofu stir fry until lightly roast 
  • In the mean time mix cornstarch and water and make a thin paste of it
  • Add cornstarch paste into pan stir fry little bit of high flame
  • Add soy sauce and chilli sauce stir , sprinkle ajinomoto and salt stir again
  • Garnish spring onion  greens and serve hot

Spinach Cheese Dip

This is a homemade spinach cheese dip. Quick & Easy to make and Delicious dip to have with Pretzels and Chips / Nachos.

Ingredients
  • Spinach / Palak leaves - 2 cups. Chopped
  • Garlic clove - 2 , crushed
  • Mozzarella cheese - 1/2 cup
  • Parmesan cheese - 2 tbsp
  • Cream Cheese - 1/2 cup ( i used Philadelphia original cheese)
  • Sour Cream - 1/2 cup
Method
  1. Pre - heat the oven to 350 F. Grease the casserole 
  2. In a hot water thaw the spinach leaves for few mins. Then squeezed out all the water and keep aside
  3. In a bowl mix sour cream, cream cheese, mozzarella cheese, parmesan and  garlic mix together. Beat the cheese mixture well
  4. Add spinach and stir, transfer mixture to the casserole . Bake the cheese mixture until the cheese is melted, about 10 mins.
  5. Serve hot
