Lo Mein Noodles - Maggi With a Twist

Lo Mein is a Chinese noodles. Sometimes bored with same taste of Maggi Noodles and along with veggies. Tried out some interesting Indo chinese taste. My kids loved it this way. Let me know try it and came out delicious.




Prep Time : 10 Mins
Cook Time : 5-8 Mins
Serve : 2-4

Ingredients
  • Maggie Noodles 
  • Snow peas - 1/2 cup (Strings removed and cut diagonally )
  • Shredded Carrots - 1/2 cup
  • Garlic crushed - 1/2 tsp
  • Salt
  • Soy sauce - 4 tsp
  • Red Chilli sauce - 2 tsp
  • Extrafirm Tofu  - 1/2 cup (Patted dry and cut into cubes)
  • Spring onions - 4 tbsp
  • Oil - 2 tsp
Method
  1. In a saucepan, cook maggi noddles as per packet directions. (Do not over cook the noodles)
  2. In a big non stick skillet , Heat oil until very hot.
  3. Add tofu stir fry until lightly browned. Add snow peas,  shredded carrots, crushed garlic and spring onions stir-fry . Cook until carrrots are tender. 
  4. Add sauce stir then add cooked noodles , sprinkle salt and stirring 1 minute to blend flavors.
  5. Serve hot

Paneer Manchurian

Paneer Manchurian This dish is a starter / Appetizer. Similar like Gobi Manchurian and quite easy to prepare.

Note : Same batter can be used for both cheesy potato and Paneer Manchurian

Prep Time :  15 Mins
cook Time :  8 - 10 Mins
Serves : 2

Ingredients
  • Paneer - 2 cups
  • Onion - 1/4, chopped
  • Spring Onions - 1/4 cup , chopped
  • Capsicum / Green Bell pepper - 2 tbsp
  • Salt to taste
  • Soy sauce - 2 tsp
  • Chilli sauce  - 2 tsp
  • Ajinomoto - a pinch
  • Garlic, chopped - 1/2 tsp
  • Olive oil - 2 tbsp
Other Ingredients for batter
  • Corn flour - 4 tsp
  • Maida / All purpose flour - 2 tsp
  • Red chilli powder - a pinch
  • Salt to taste
  • Baking soda - a pinch
  • Pepper powder - a pinch
  • Water - 1/4 cup (as per need)
  • Oil - to deep fry

Method
  1. Cut the paneer into triangle shape
  2. Mix all the batter ingredients and make a medium thick using water (as per need)
  3. Dip each paneer pieces and deep fry till golden color and remove drained into paper towel
  4. Heat oil in a wok / large pan add olive oil 
  5. Add garlic, onions, spring onions, capsicum and ajinomoto fry in the high flame
  6. Add paneer then add soy sauce and chilli sauce 
  7. Add salt mix well and serve hot

Rotini With Beans and Basil Pasta

Its a basil flavour of pasta and healthy dish. we all loved it simple to make that too working people and the bachelors.

Ingredients
  • Rotini pasta or any other type of pasta - 2 cups
  • Green beans, chopped - 1/2 cup
  • Salt to taste
  • Basil leaves 1/2 cup
  • Water - 1 tsp
  • Olive oil - 1/4 cup
  • Black pepper crushed - 1/2 tsp
  • Tomato , chopped - 1/2 cup
  • Basil leaves for garnish
Method
  1. In a large pan , add water and pasta cook for a while until pasta done. Drain pasta rinse under cold running water and drain again.
  2. Meanwhile in a blender add basil, oil, and water make a puree.
  3. Then cook the beans in the microwave or pan until tender
  4. In a large bowl, toss pasta, beans, tomato and basil puree, salt and pepper 
  5. Garnish with basil leaves & Serve hot.

Vegetable Manchurian (with Gravy)

This dish, if made dry, you can have it as a regular snack and if it is done with Gravy this will be a very tasty side dish for the Vegetable Fried Rice. I am posting the Veggie Manchurian with Gravy Recipe today. As simple as it is but it does take time for chopping the vegetables and making the vegetable dumplings. One can eat just like that with chutney , atleast my son did and he loved it. This is again popular Indo-chinese recipe .






Ingredients for Vegetable Dumplings
  • Green cabbage shredded - 1 cup
  • Spring onions, finely chopped - 1/2 cup
  • Carrots shredded - 1 cup
  • Beans , finely chopped - 1/2 cup
  • Green chillies finely chopped - 1/2 tsp
  • Ginger + Garlic paste - 1 tsp
  • Ajinomoto powder - 1/3 tsp
  • Corn flour - 1/2 cup
  • Maida - 2 tsp
  • Salt to taste
  • Oil for deep frying
Method
  • Cook the vegetables except spring onions till half done (do not over cooked)
  • Then take a bowl add cooked vegetables , add spring onions , add ajinomoto powder, salt to taste & add ginger garlic paste and chillies and corn flour & maida mix well and make a dough ( add sprinkle water if it is too thick) and make small dumplings
  • Deep fry the vegetable dumplings until golden brown

Ingredients
  • Spring onions, finely chopped - 1/2 cup
  • Ginger paste - 1/3 tsp
  • Garlic , finely chopped - 1 tsp
  • Corn flour - 2 tsp ( dissolved into water)
  • Soya sauce - 4 tsp
  • Salt to taste
  • Water - 2 cups
  • Ajinomoto powder - A pinch
  • Olive oil - 1 tsp
Method
  • Heat pan add oil and add spring onions stir fry
  • Then add spring onions , ginger paste and garlic fry
  • then add water and add soya sauce bring to boil on low flame
  • add salt to taste, ajinomoto, corn flour, stir for few minutes until medium thick (if it is too thick add some water)
  • Just before serving add vegetable dumplings to the gravy
  • Serve hot with fried rice

Vegetable Fried Rice

I have not posted this recipe in my blog yet. I have made this many times but somehow i had not posted it !! Well this is a very well known & popular Indo chinese dish (atleast used to be among our generation). I used to have this at small chinese stalls (Gaadi wala) and indo-chinese restaurants in india . This is a complete meal when you have it along with veggie manchurian (with gravy). It is also a very good combination. Will post Veggie Manchurian soon too.




Ingredients
  • Sona Masuri / Chinese rice - 2 cups
  • Vegetables - Shredded green cabbage, Shredded green bellpepper, Shredded carrots, Finely chopped beans, each - 1/4 cup
  • Bean sprouts - 1/4 cup
  • Spring onions, chopped - 1/4 cup
  • Soya sauce - 2 tbspn
  • Red chilli sauce - 2 tbspn
  • Ajinomoto - 1/4 tsp
  • Salt to taste - (1/3 rd spoon is enough)
  • Olive oil - 5 tbspn
  • Garlic finely chopped - 2 tbspn
Method
  • Rinse the rice and add 1/2 cup water and soak the rice along with add little salt and 1/2 tsp oil leave for 10 mins then Cook the rice and cool completely
  • Take a large wok add oil
  • Add garlic and spring onions fry
  • Then add all the vegetables, sprouts, stir fry on high flame
  • Then add soya sauce and chilli sauce and ajinomoto stir fry and switch off the flame
  • Add rice and sprinkle salt mix well
  • Serve with manchurian gravy

Spring Rolls

Again indo chinese dish veggie sping rolls. You can get spring roll sheets in the frozen section any asian market. I used kawan brand. Nice to have in the evenings .... especially i make these recipes only on weekends. Not much time is need to prepare this as well.






Ingredients
  • Spring roll sheets (available in asian stores) (I used Kawan)
  • Green Cabbage shreded - 1/4 cup
  • Carrot shreded - 1/4 cup
  • Green Bell Pepper / Capsicum - 1/4 cup
  • Spring onions - 1/4 cup
  • Soy Sauce - 2 tsp
  • Chilli Sauce - 2 tsp
  • Salt to taste
  • Ajinomoto - a pinch
  • Olive oil - 2 tsp
  • Ginger + Garlic paste
  • Oil for deep fry
Method
  • Thaw the spring roll sheets for 10 minutes
  • Heat Oil add all veggies along with ginger + garlic paste saute properly
  • Add soy sauce and chilli sauce and sprinkle salt and ajinomoto
  • Stir well till mix properly then remove from the stove cool a bit
  • Heat oil to deep fry
  • Take a single sheet & add a spoon full of veggie then cover it from bottom corner of the wrapper and roll 2 folds and 2 sides of the wrapper till last edge brush water to seal and deep fry.
    Serve hot with sauce / ketchup

Vegetable Hakka Noodles

Everyone's favourite noodles. Especially kids will love noodles. I tried my best for it to be just like a resturant style. I have made this number of times but never got time to take a photo of this . Finally i did this time . I feel it is easy to prepare.





Ingredients

  • Noodle Packet ( Asian Hakka Noodle) - 1 packet
  • Olive oil - 2 tsp
  • Chilli Sauce - 2 tsp
  • Soy Sauce - 2 tsp
  • Salt - 1/4 tsp (adjust to taste)
  • Ginger+ Garlic Paste - 1/2 tsp
  • Ajinomoto - 1/4 tsp
  • Vegetables :
  • Green Cabbage shredded - 1/2 cup
  • Green Bell Pepper shredded - 1/4 cup
  • Carrots Shredded - 1/4 cup
  • Spring Onions - 1/2 cup
  • Bean sprouts - 1/4 cup
Method
  • Take a large pan heat water bring to boil thoroughly then add noodles leave it for 5 min on low flame
  • After 5 mins drainout all the water and sprinkle oil to the noodles
  • Take a large wok add olive oil
  • Add all the shredded vegetables along with ginger garlic paste
  • Saute for a while then add all the sauces and sprinkle salt and ajinomoto
  • Stir well then add noodles Stir and Stir to mix well
  • Serve hot

Baby CORN Manchurian

Baby Corn Manchurian has a delicious taste. Crispy, Spicy and very declicious. Most of us are very familiar with Gobi Manchurian. I like making dishes with Baby Corn because it comes out very tasty, sweet and it also adds a lot to the visual aspect of the dish.Like Baby Corn Pulao, Subzi Or Curry etc.,I made this as an appetizer dish. It came out very Yummy, Crispy n Spicy. The weather was chilly outside and this spicy hot dish was a perfect foil for it.

Ingredients - 1
  • 1 Packet Baby Corn
  • 1/2 Cup Corn Flour
  • 1/4 Cup Rice Flour
  • Red chilli powder
  • 1 tsp Garlic + Ginger Paste
  • Salt to taste
  • Oil for deep fry
Ingredients - 2
  • 1 Bunch of Spring Onions
  • 1 onion (sliced)
  • 2 Garlic (crushed)
  • Soy Sauce (acc to taste)
  • Red Chilli Sauce or Red Chilli Powder (acc to taste)
  • Tomato Ketchup
  • 1tsp Oregano
  • Vinegar (option)
  • 2 tsb Olive Oil
  • Salt to taste
Method - 1
  • Cut Baby Corns length wise and cook the corn in a pan using a cup of water with salt. drained keep aside.
  • Mix the flour and chilli powder, ginger garlic to make a paste (Batter)
  • Baby corn with the batter and then deep fry at medium flame
  • Remove and drain in paper towel
Method - 2
  • Heat oil in a large wok(kadai)
  • Add garlic, onions, spring onions fry till onions are pink
  • Add fried baby corn then add one by one sprinkle soy sauce, chilli sauce, vinegar, salt, tomato ketchup, oregano
  • Stir well & ready to serve

Herb Pasta

Usuallly i dont make pasta at home..somehow i dont like the taste when I do it at home. I love the pasta they make in the restaurents.

One day i was googling and i got this recipe from tarla dalal. Then I made up my mind fully to prepare this for evening dinner. I made it and it was simply superb taste. The combination of panner & pasta and adding herbs which is not too much spicy. Its quite simple because not too much ingredients needed and my son loved it. Try it at home if you have kids they will like this definitely.


Preparation Time : 10 minutes
Cooking Time : 10 minutes
Serves 4

Ingredients
  • 3 Cups cooked whole wheat pasta ( u may use whole fusilli, penne or tagliatelle)
  • 2 Cloves garlic, finely chopped
  • 2 Green chillies, finely chopped
  • 1 & 1/2 Cups paneer (Cottage cheese) cut into cubes
  • 1/2 Cup Milk
  • 1 Cup fresh cilantro or Parsley , finely chopped
  • 1/2 Cup fresh basil leaves, finely chopped
  • 2 tbsn cream
  • 1 tbspn butter
  • salt to taste
Method
  1. Cook the pasta in the water and salt & drained keep aside
  2. Heat the butter in a pan add the garlic and green chillies
  3. Add the paneer cubes and stir for some time
  4. Add all the remaining ingredients and mix gently
  5. Mix the pasta, stir gently and serve immediately

Corn Manchurian

I had corn kernels in my fridge. So I thought of doing something with that. I thought i would make Corn Manchurian Very simple to make and as you all know corn is good for health..little spicy in the winter to eat yummy !!!!! My husband and little son loved it very much...try it..




Ingredients


  • 1 Cup Corn Kernels (fresh or frozen )
  • 1 Medium Onion, finely chopped
  • 1 Green Pepper, finely chopped
  • 1 tsp tomato ketchup
  • 1/2 tsp soya sauce
  • 1/2 tsp Chilli powder
  • 1/4 tsp Oregano powder
  • 2 tsp Butter
  • salt to taste
  • 1 tsp chopped coriander leaves


Method
  1. Boil the corn in a little water, drained and keep aside
  2. Heat butter add onions, green peppers stirfry till done
  3. Add corn, salt, chilli powder, tomato ketchup, soya sauce stir for few minutes
  4. Add oregano mix well
  5. Garnish coriander. Serve immediately

GOBI MANCHURIAN





Ingredients
  • 1 medium size Gobi (Cauliflower)
  • Rice Flour - 1/4 cup
  • Corn Flour - 1 cup
  • Red chilli powder - 1 tsp
  • Salt to taste
  • Garlic powder / paste - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Oil - 2 tsp
  • Soya sauce - 2 tsp
  • Vinegar - 1 tsp
  • Tomato ketchup - 2 to 3 tsp
  • Onion - 1 cup (lengthwise chopped)
  • Capsicum - 1/2 cup Lengthwise chopped)
Method
  • Make a paste of corn flour, rice flour, salt, chillipowder and garlic powder add water mix well
  • Make gobi florets and dip in to the paste and deep fry in the oil till golden
  • Heat oil in the wok
  • Add onions and capsicum and garlic make fry till done
  • Add soya sauce, tomato ketchup stir fry for few minutes
  • Add fried gobi florets and stir fry add little bit of salt and vinegar mix well
