Banana Walnut Cake

My family loves this cake banana flavor with nuts. Thought of doing a eggless yummy cake.

Ingredients
  • Cake Mix (Yellow or White) - 2 cups 
  • Walnut pieces - 4 tbsp
  • Oil - 1/2 cup
  • Banana - 1 &1/2 , Pureed
Method
  • Blend bananas into a puree. Mix all the beat for 8mins
  • Preheat the oven 400F
  • Pour batter into rectangle baking pan
  • Bake for 15 - 20 mins or Bake the cake until the way to test is to prick the cake with toothpick and it should come out clean
  • Serve

Kadlepappu Kosambri | Kadlebele Kosambri

I made this kosabmbri for Ugadi. Links are below for other Ugadi festival recipes ... Kosambri is specially made on Rama Navami (which is next week) Festival. .  I have also posted other kosambri recipes.

Prep Time : 4hrs + 10 Mins
Serve - 2

Ingredients
  • Kadalebele / Kadalupappu / Chana dal - 1 cup
  • Mavinakai / Raw mango grated / Manga thuruvul - 4 tbsp
  • Salt to taste
  • Lemon juice - 1 tsp
  • Coconut grated / Thenga / Thenginakai - 2 tbsp
  • Coriander leaves / Kothambri soppu  - few, chopped
Tempering
  • Oil - 1 tsp
  • Mustard seeds - 1/2 tsp
  • Asafoetida - a pinch
  • Green chillies - few 
  • Curry leaves - few
Method
  • Soak the kadlupappu / chana dal - 4 hrs. Later drained the water
  • In the bowl add mango grated, coconut, lemon juice, coriander, salt mix well
  • Heat oil in a small pan add mustard seeds allow to splutter
  • Then add asafoetida, chillies, curry leaves pour into bowl
  •  Mix well and serve
Note : If  the Mango season are not there Cucumber can be added to the kosambri.

Lime with Ginger Drink

Summer is around the corner.  Finally from the last few days the weather is starting to get better in NY. My kids  are very happy becoz they can play outside. My older son wants to drink something cool after his soccer game. I take this drink to the ground.







Prep Time : 10 Mins
Serve : 4

Ingredients
  • Lemons - 1/2 cup squeezed
  • Sugar - 2 tbsp
  • Salt a pinch
  • Ginger Paste / grated - 1/2 tsp
  • Ice cubes
  • Cold Water 
Method
  1. Blend a 2 tbsp with ginger and sugar 
  2. Then Mix all the ingredients and make a drink 
  3. Serve chill

Balekai Bajji | Raw Banana Fritters

This is the one of the popular road side snacks. We used to have it along with Coconut Chutney. Also made on casual and also formal occassions. Watch and enjoy IPL with bajji / fritters ............

Cooking Time : 15 Mins
Makes - 15-20

Ingredients
  • Raw banana / Balekai - 1 
  • Besan / Gram flour / Kadle hittu - 3/4 cup
  • Rice flour / Akki hittu - 1/4 cup
  • Chilli powder - 2 tsp
  • Baking soda - a pinch
  • Salt to taste
  • Water 
Method
  1. Mix all the ingredients in a bowl and make a batter with enough using water. Should be medium thick batter
  2. Heat the 300 ml oil in a medium flame
  3. Remove outer banana skin and make a thin slice 
  4. Dip into batter and deep fry till golden brown 
  5. Remove and drained into paper towel
  6. Serve with coconut chutney
