Nankhatai

This biscuit is very common in India. This would be our favorite cookie. I don't miss the bakery biscuits.Check out the ingredients of this biscuits



    Ingredietns

  • Maida / Plain flour - 2 cups
  • Rice flour - 1/4 cup
  • Bengal gram flour / Besan - 1/2 cup
  • Sugar Powder - 1-1/2 cups (adjust as per taste)
  • Vegetable shortneing/Dalda / Vanaspathi Ghee OR Butter (unsalted) - 1 cup (melted, I have used Butter)
  • Baking Powder - 1/2 tsp

Method
  • Cream the butter and sugar for 4 to 5 minutes until the mixture is light and fluffy using handblender, occasionally scraping down the sides of the bowl with a rubber spatula.
  • Sieve the flours & baking powder in a mixing bowl
  • Now keep adding the dalda ghee or butter little by little to the bowl mix with hand then add sugar powdered in that and again sieve well and make a soft dough
  • Divide the dough into small balls and slightly press
  • Place the nankhatai on greased tray or use parchment sheet 
  • Bake at 400 F (200 degree Centigrade) for about 15-20 minutes. (check in between)


PS : Depends upon the Oven. Please be sure the temparatures of the oven may vary for different ovens. It may over heat or some may have less heat. I normally do @ 400 F (200 C). The best way is to start on low heat then you can make it high later.

I love this cookies, my mom used to make and also buy them from the bakers.
I didn't know they added besan flour to it.

We Sindhis too call it nankhatai, but the ones which are popular amongst us are nan khatais like hot cross buns(with a cross or plus whtever u call) or the ones with a roasted or fried cashew sitting at the top of each nankhatai(u used cherries i guess and it looks cute)

Hi mala,
this is archana, a native of bengaluru staying in South Africa
tried ur khara biscuit recipe and it was an instant hit among the Indians here in South Africa.am yet to try your benne biscuit recipe. Was surprised that rice flour and besan r added to it.
When I tried the khara biscuit recipe I found out that the biscuits puff up better when individual balls r made and then flattened by hand and texture of the baked biscuit is just like the one's that u find at the iyengar bakeries!
